Oatmeal Pumpkin Chocolate Chip Cookies

I hope you are all having a fantastic day! We are currently interviewing for a few positions at work so the days are flying by this week! Since it is Fall and most people will be heading to at least a few events between now and Thanksgiving, I wanted to share with you one of my new favorite pumpkin recipes. This cookie is great because it has a similar texture to a muffin but the structure of a cookie.

I know everyone hates long winded posts when all they really want is the recipe so I will keep this short and sweet! This recipe can be altered to fit your specific tastes and I think it would be awesome even if you added nuts in place of the chocolate chips or even in addition.

Oatmeal Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 1 1/2 Cups Softened Butter
  • 2 Cups Brown Sugar, Packed
  • 1 Cup White Sugar
  • 1 Can Pumpkin ( 15 ounces)
  • 1 Tsp Vanilla Extract
  • 4 Cups All Purpose Flour
  • 2 Cups Quick Cooking Oats
  • 2 Tsp Cinnamon
  • 2 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1 Tsp Salt
  • 2 Cups Chocolate Chips, Mini

Equipment

  • Cookie Sheet
  • 2 Mixing Bowls
  • 2 Whisks

Method
 

  1. Preheat the oven to 375* Fahrenheit.
  2. Combine butter, brown sugar, white sugar and beat together until smooth and creamy.
  3. Add egg,vanilla pumpkin and beat until smooth.
  4. In a separate bowl, mix, flour, oats, baking soda, baking powder, salt and cinnamon.
  5. Slowly stir the butter mixture into the dry ingredients until fully combined.
  6. Stir in mini chocolate chips.
  7. Scoop 1 to 2 tablespoons of batter for each cookie onto a cookie or baking sheet.
  8. Bake for 10-12 minutes or until lightly browned.
  9. Let cool.
  10. Enjoy!
