Oatmeal Pumpkin Chocolate Chip Cookies

I hope you are all having a fantastic day! We are currently interviewing for a few positions at work so the days are flying by this week! Since it is Fall and most people will be heading to at least a few events between now and Thanksgiving, I wanted to share with you one of my new favorite pumpkin recipes. This cookie is great because it has a similar texture to a muffin but the structure of a cookie.
I know everyone hates long winded posts when all they really want is the recipe so I will keep this short and sweet! This recipe can be altered to fit your specific tastes and I think it would be awesome even if you added nuts in place of the chocolate chips or even in addition.
Oatmeal Pumpkin Chocolate Chip Cookies
Equipment
- Cookie Sheet
- 2 Mixing Bowls
- 2 Whisks
Ingredients
- 1 1/2 Cups Softened Butter
- 2 Cups Brown Sugar, Packed
- 1 Cup White Sugar
- 1 Can Pumpkin ( 15 ounces)
- 1 Tsp Vanilla Extract
- 4 Cups All Purpose Flour
- 2 Cups Quick Cooking Oats
- 2 Tsp Cinnamon
- 2 Tsp Baking Soda
- 1 Tsp Baking Powder
- 1 Tsp Salt
- 2 Cups Chocolate Chips, Mini
Instructions
- Preheat the oven to 375* Fahrenheit.
- Combine butter, brown sugar, white sugar and beat together until smooth and creamy.
- Add egg,vanilla pumpkin and beat until smooth.
- In a separate bowl, mix, flour, oats, baking soda, baking powder, salt and cinnamon.
- Slowly stir the butter mixture into the dry ingredients until fully combined.
- Stir in mini chocolate chips.
- Scoop 1 to 2 tablespoons of batter for each cookie onto a cookie or baking sheet.
- Bake for 10-12 minutes or until lightly browned.
- Let cool.
- Enjoy!

I love pumpkin chocolate chip cookies. It just says fall to me. I’ve never done them with oatmeal. I’ll have to give it a try

It added just a little bit of extra texture to the cookie! I took a bag into work and it was gone the next morning!
