Oatmeal Pumpkin Chocolate Chip Cookies

Happy Tuesday Everyone!

I hope you are all having a fantastic day! We are currently interviewing for a few positions at work so the days are flying by this week! Since it is Fall and most people will be heading to at least a few events between now and Thanksgiving, I wanted to share with you one of my new favorite pumpkin recipes. This cookie is great because it has a similar texture to a muffin but the structure of a cookie.

I know everyone hates long winded posts when all they really want is the recipe so I will keep this short and sweet! This recipe can be altered to fit your specific tastes and I think it would be awesome even if you added nuts in place of the chocolate chips or even in addition.

Oatmeal Pumpkin Chocolate Chip Cookies

  • Cookie Sheet
  • 2 Mixing Bowls
  • 2 Whisks

Ingredients
  

  • 1 1/2 Cups Softened Butter
  • 2 Cups Brown Sugar, Packed
  • 1 Cup White Sugar
  • 1 Can Pumpkin ( 15 ounces)
  • 1 Tsp Vanilla Extract
  • 4 Cups All Purpose Flour
  • 2 Cups Quick Cooking Oats
  • 2 Tsp Cinnamon
  • 2 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1 Tsp Salt
  • 2 Cups Chocolate Chips, Mini

Instructions
 

  • Preheat the oven to 375* Fahrenheit.
  • Combine butter, brown sugar, white sugar and beat together until smooth and creamy.
  • Add egg,vanilla pumpkin and beat until smooth.
  • In a separate bowl, mix, flour, oats, baking soda, baking powder, salt and cinnamon.
  • Slowly stir the butter mixture into the dry ingredients until fully combined.
  • Stir in mini chocolate chips.
  • Scoop 1 to 2 tablespoons of batter for each cookie onto a cookie or baking sheet.
  • Bake for 10-12 minutes or until lightly browned.
  • Let cool.
  • Enjoy!
