Hey Everyone,

I apologize for the late post again this week. I am, unfortunately, still dealing with some health issues that took me away from work again today and have left me feeling exhausted.

Tonight’s post is going to be short and simple.

Disney Halloween Scavenger Hunt

Good Morning!

With the countdown on until my next Disney vacation ( 2 days!!!), my sister and I decided it might be fun to put together an easy little scavenger hunt for ourselves and all of you! Sydnee also has an amazing Fall Bucket List up on her website that you should definitely check out, here!

We participated in the Easter Egg Hunt this past March and had such a wonderful time that we thought a Halloween themed hunt would be perfect!

Chocolate Cookies- N – Scream Recipe

Happy Tasty Tuesday!

This post is up late today because it was crazy busy at work and I am still actively up making these cookies! Wednesday night’s my sister who owns an amazing bakery, Cierra’s Bake Shoppe , sells cookies at a local Farmers Market. I love to bake so I decided to whip up a batch of my Chocolate Cookies – N – Scream cookies to sell along with all her other delicious treats. While I was baking, I thought with Halloween quickly approaching, you might be looking for the perfect cookie to take along to a party of enjoy around the house.

These cookies are amazing and the perfect balance of chocolate and vanilla in almost every bite!

Chocolate Cookies- N – Scream

  • 1 Cup Butter ( Sweet Cream, Salted)
  • 3/4 Cup Granulated Sugar
  • 2/3 Cup Brown Sugar (Packed)
  • 2 Eggs
  • 1 Tsp. Vanilla
  • 2 1/2 Cups Flour
  • 2/3 Cup Unsweetened Cocoa Powder
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • Cookies N’ Cream M&M’s ( 1 Bag )
  • 1/2 Cup White Chocolate Chips

Directions:

  1. Mix dry ingredients together and set aside
  2. Cream butter and sugars together until smooth
  3. Mix eggs and vanilla into butter and sugar mixture
  4. Fold in dry ingredients
  5. Roll Dough into a ball

6. Mix in M&M’s and white chocolate chips

7.Roll dough into small balls and place on un-greased cookie sheet

8. Bake 350 Degrees for 9-11 minutes

Date Night Ideas- October

Happy Monday!

I hope all of you are having a great day so far. My Starbucks app is still currently down but I am hoping to have a cup of coffee in hand in a few hours!

I think this weekend was one of the shortest I have had lately but it was a very full weekend! On Saturday, I spent some time cleaning and sorting through some paperwork on my desk that has been piling up. After that Damiean and I ventured out for lunch and wound up driving around for a little while just enjoying each others company. We are planning a trip in 2 weeks up to Flagstaff so we were looking over hotels and I was brainstorming packing since it will be quite a bit colder up there and we will be outside for a majority of Saturday while we are there.

If you follow me on Instagram, you know that most of Sunday morning was spent on the treadmill running my 13 mile long run! It felt good but my hips are feeling it today!

Since one of the reasons Damiean and I are heading up north in a few weeks is to celebrate our 3 1/2 year anniversary (not that he would admit that is what we are doing) I thought I would share with you today some of my favorite date night or day date ideas for October. Some of these ideas are good all year long while others, at least in Arizona, are October specific.

  1. The Arizona State Fair

Every year in October, the Arizona State Fair rolls into town. While I have not yet gone this year, Damiean and I do try to get there each year. While it can be pricey, there are often times you can find deals regarding bringing canned food or after a certain time of day.

One of Damiean’s favorite times to go is on days where you can get the fair’s version of the “Fast Pass” and skip the lines. While it is nice to not have to wait in line, I am not a huge fan of a majority of fair rides so my options are somewhat limited. Aside from the food, one of the best things about the fair is being able to just spend time with your sweetie and walk through the exhibits.

2. Haunted House

I will preface this by saying that I am a fraidy cat! I do not like knowing things are hiding up ahead of me ready to jump out and scare me. However, each year we go to at least one Haunted House and I pretend to be the tiniest bit brave. The one thing that makes it more fun for Damiean is making me go first, which I hate! But I will admit after it is all said and done I had fun.

3. Pumpkin Carving

During the month of October, I love getting ready for Halloween. Therefore, one of my favorite dates is the pumpkin patch or simply heading to the grocery store to pick up pumpkins to carve at home. One of my favorite things to do while carving pumpkins is turn on Hocus Pocus in the back ground and just enjoy feeling like a kid again.

4. The Zoo

Since the weather is finally cooling down in October, it is always nice to finally be able to go outside and enjoy each other’s company. The zoo is great because you can wander around and explore together. A few of my favorite zoo’s in Arizona are- The Phoenix Zoo, The Wildlife World Zoo and the Heritage Park Zoological Society (Prescott).  If you haven’t visited the Heritage Park location yet, I would highly recommend it! Damiean and I went up there to zipline and had a ton of fun.

5. Head Up North

This time of year it is always wonderful to not only get away but also explore Arizona in cooler temperatures. Damiean and I love venturing up to Sedona, Prescott and the surrounding areas for a quick get away on the weekends. It is nice during October because the leaves are changing and the temperatures are quickly dropping.

One additional idea is to just go out for coffee. Sometimes, it is easy to forget that the simple things are sometimes the best things in life. It is so easy to get disconnected and out of sync when life is crazy so I would highly recommend just sitting down, grabbing a cup of coffee and talking to each other.

I am so excited that it is the end of the week and we are heading into what looks like a beautiful weekend weather wise.This week has felt long since I have been on meds and in and out of the doctors office but we came through in one piece!

My plans for this weekend are to write up some blog posts, read, start packing for my Disneyland trip next weekend, run 13 miles and then treat myself to a delicious breakfast somewhere as a reward! I am sure the weekend will also be filled with coffee but that is every weekend!

I am so thrilled to say I am partnering up with the Salt River Fields Spooktacular Hot Air Balloon Festival in Arizona and giving away a family 4 pack of tickets to their event taking place in Scottsdale, Arizona on Saturday, October 27th from 5:00 p.m. to 9:30 p.m.

This two day event is taking place on Friday, October 26th and Saturday October 27th. There will be over 20 Hot Air Balloons on display and copious amounts of candy ( over 4,000 pounds) being passed out during their trick-or-treat. In addition, there will be live music, food and beverages, vendor market, free kids zone, tethered balloon rides, haunted spooky trail, fireworks and much more!

My October Reading List

Good Morning!

It is finally Thursday and what a week so far! How is yours going?

I am finally feeling back to somewhat normal today and happy to say that I am on the mend. I am still winding down on some medication from the infection I was dealing with but nowhere near the amount I was on before.

Yesterday I shared with out my October goals. I purposely left off reading because I wanted to focus on that separately.

Since I am trying to be much more intentional about the way I live my life and wanting to take better care of myself both mentally and physically, I decided to pick some books that would fit into that criteria. While I still might cycle a few “for fun” books into the mix, these are the books I am for sure reading this month.

  1. You are a BADASS by Jen Sincero.

20181004_073341This book has always jumped out at me from the Target shelves but I never picked it up because in my head, by doing so I was just adding extra pressure on myself to not only read the book but also to apply it to my everyday life. I will say I am actually excited to break this one open and start working to a better more badass version of myself!

2. Grace Not Perfection by Emily Ley20181004_073328This book stood out to me not only because of the beautiful cover but also because of the message. Like most women I know, I strive everyday for perfection only to find myself falling short. The message with this book is that you should allow yourself the grace to make mistakes and live your life on your own terms while still being yourself.

3. Staying Stylish by Candace Cameron Bure

I will also admit that if I had to choose one person that was my “goals” it would be her or Reese Witherspoon! I love the idea of this book and am so excited to start reading through and learning more about Staying Stylish.

October Goals

Hi There!

This post is a little bit late going up but today was a long, busy day so we are just going to go with it!

I am participating in the #last90days with Rachel Hollis currently and that has somewhat forced me ( in a good way) to focus on goals.

Today was my follow up appointment with my doctor regarding the leg infection I’ve been dealing with. Luckily, it was good news and it looks like the infection is gone. For now I am dealing with the dry skin and finishing up the medication I was prescribed.

That brings me to my first goal: Focusing on my health!

Since I have been dealing with this current health crisis lately, it has caused me to take a look at how I have been taking care of myself lately. I am happy to say that even before this challenge started I had been eating better and working out. With the swollen foot and medications it was hard to keep up but I am excited to get started again! I do have 3 half marathons coming up soon so it will be good to have an end goal

My second goal is going to be: Have Fun!

I will admit I like to stick to the usual plan and do the usual day in and day out activities.For these month of October and hopefully the last 90 days, I am going to focus on cutting down the stress and focus on having fun. Luckily, I have quite a few fun activities planned and I am excited to share them with you!

My third goal: Drink more water!

I don’t know about you but I have a hard time drinking half of my body weight in water. This month  I am trying to focus on drinking more water and hydrating the right way. While this does tie in with health, I felt it was important to mention separately.

My fourth goal: Blog everyday!

While the blog posts like today’s might sometime come up a little later than intended, it is my intention to blog everyday.

Lastly, the my fifth goal is: Get Organized!

I consider myself pretty organized but I really want to clear out some clutter and get myself even more organized.

Low Carb Pumpkin Pancakes/ Waffles

Hi Everyone!!

I hope your October is off to a great start. Today I wanted to share with you a new favorite recipe of mine for Low Carb Pumpkin Pancakes.

I am trying to avoid eating large amounts of carbs lately so I was on the hunt to find a receipt for a delicious pumpkin pancake or waffle. I combed through a few and combined them till I found just the right mix. This is an adaptation between a few different recipes but the two most prevalent was Our Best Bites and Willow Bird Baking

Like most things, I decided to put a Disney twist on it and make mine into a Mickey Mouse shaped treat. The maker I have is technically a waffle but the consistency, to me anyway, is more like a pancake.

This recipe is not super sweet but you can top with a little whipped cream or syrup if you are not trying to avoid the sugars.

Ingredients:

 

  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1/2 to 1 teaspoon pumpkin pie spice
  • A pinch (right around 1/8 teaspoon) baking powder
  • 2 1/2 tablespoons of vanilla

Instructions:

  • Whisk together pumpkin, eggs, pumpkin pie spice, baking powder and vanilla extract until the batter is smooth and very well combined.
  • Depending on if you are making waffles or pancakes, the cooking instructions will vary a little bit.

Pancakes:

  1. Grease a griddle or nonstick pan with cooking spray or a little vegetable oil.
  2. Heat skillet or pan on medium for about 10 minutes.
  3. Pour batter to form pancakes of whatever size you like.
  4. Cook first side until bubbles form on top, about three minutes,flip and cook other side until it is brown, about two minutes.

Waffles:

  1. Preheat the iron.
  2. Coat with cooking spary.
  3. Pour the batter and spread so that the batter fills the waffle iron but does not overflow. If you are utilizing a Belgian waffle maker, it will require more batter.
  4. Close lid and cook waffle until the iron stops steaming. Cook times will vary depending on the waffle iron. If you would like the waffle a little crispier, cook for a tiny bit longer.

Once the pancakes/ waffles are completely cooked, they are ready to be served. My sister decided hers should be served with a side of mini chocolate chips for some added sweetness and some turkey bacon.

Mine were served with a small side of whipped cream with a little sprinkle of pumpkin pie spice. and turkey bacon.

The nutritional breakdown that I figured out is as follows. Please note that I am not a doctor nor a nutritionist and this is a breakdown based on the recipe as it is noted above.
If you are making 6-8 pancakes, this is the breakdown per pancake:
41 calories, 1.5g of fat, 2.5g of carbs, 2.1g of protein, 0.6g of fiber, 1.3g of sugar
If you are making 2 larger waffles:
123 calories, 4.6g of fat, 7.4g of carbs, 6.2g of protein, 1.9g of fiber, 4g of sugar

Since I have had some new faces around the blog lately I thought I would take a moment to re-introduce myself.

My name is Lindsey and I was born and raised here in Arizona. I have been blogging on and off for a number of years and it took some time to find a home with a blog name and vibe but I finally found it here at Running Around With Lindsey.

I am 32 years old and a lover of all things Disney.

I am currently training for 3 half marathons and hoping to do a few races just for fun over the next few months. I am a self-proclaimed coffee addict with a love for both Dunkin Donuts and Starbucks.

Hi There,

I hope you are having a wonderful Wednesday so far!

I just wanted to do a quick check in with you and see how you are! So, how are you?!

Just a quick update for you- So far today has been pretty good for me. It is overcast and cloudy out which for me is the perfect weather to relax and spend some extra time in your PJ’s. However, I am not in my pajamas and unfortunately, I am not at home either! Today’s work day is full and after work I’ve got a 30 minute training run to get done along with a to-do list as long as my arm!

Last night I did decide to be a bit lazy but I turned lazy into creative and made the cutest (in my opinion), Haunted Mansion inspired wreath. I picked up the stuff from the dollar store so it probably cost me under $7 to make this wreath. I love how it turned out and decided to make one for the front door as well.

Luckily, I am drinking an iced coffee currently so that is easing the pain of making it through the middle of the week slump! ( can you tell it is a bit humid!)

Tomorrow is date night but we are kind of double-dipping and celebrating Damiean’s brother and nieces birthdays as well. We will be going out to dinner as a group. My only issue is that I am the only one of us that is sticking to a high protein, low carb diet and Chinese is not known for being particularly low carb. I am thinking I will stick with beef or chicken and broccoli with brown rice but I will happily take any suggestions that you guys might have.

I am also excited to announce I will be participating in Rachel Hollis’ Last 90 Days Challenge! I cannot even express to you how much I admire and appreciate Rachel Hollis. She is a reality check for me on most days and really makes me stop and evaluate a situation before reacting or downing on myself. Are you a Rachel Hollis fan?
